WHERE IT ALL BEGINS

The green fields of Ruviano

Clean air, large spaces and lots of greenery. Ruviano is a village in the province of Caserta where
the Costanzo family has stablished the starting point of its mini-chain for the production of mozzarella and dairies.

On these 170 hectares of land, we grow the mix
of herbs that is at the basis of our buffaloes’ diet. Here, our team of agronomists studies the most suitable food ration for the various moments of the life of the buffaloes.

The breeding farm

We believe that milk quality is strongly connected to the quality of life of buffaloes. That is why we look after the wellbeing of our buffaloes in every aspect. Our buffaloes enjoy adequate stable space, outdoor resting areas and a carefully planned diet.

Cleanliness and hygiene are at the highest levels, as well as the milking equipment which guarantees maximum efficiency with the least discomfort for the animals.

The dairy factory

Every day, at dawn, the expert hands of our cheesemakers transform the fresh milk into
cheese, carrying on a centuries-old tradition of our territory. The hand-cutting procedure called “mozzatura” is evidence of the entirely artisanal production process, which ensures a tasty and genuine final product.
