It is a fresh spun curd cheese made from buffalo milk only, smoked with wheat straw, appreciated for its particular fragrance especially if it is consumed at a temperature of about 28°. The smoked mozzarella is available in a round format from 100 g up to 3 kg and in a braid format from 120 g up to 3 kg. If consumed within three days, this product should not be kept in the fridge, but at room temperature in its preserving liquid. Origin of the milk: Italy. Ingredients: buffalo milk, rennet and salt.
